Man Gifts: The Mantry

I must admit...this holiday shopping is going to be hard. Not because I do not know what the guys in my life like, but because it is getting harder and harder to choose gifts that not only that they will like or love but will show just how much they mean to me.

As for my two boys, ages 12 and soon to be 15, they are easy. Every gift for them will be something that makes them happy, have fun, educates them and inspires them.

I do have a few men in my life who are single and mean the world to me. They are  foodies like me and one loves to think that he is a gourmet chef. Although that is what he may think he is, he still needs a bit of assistance every now and then. That, on top of the fact that he works a hard nine to five, dinner as a single is more than shouting your order through the local drive through.

Imagine my excitement when I saw this.

Ready For Easter

It is getting close to that time and I have been searching the internet for ideas. As my kids get older, it gets harder to come up with ideas that they do not think is too 'baby-ish'. But heck, as long as they live with me, they will just have to settle for doses of 'cutesy'. I am the boss after all and what mama wants is what everyone gets.

Holiday Cakes: Cakes to Make This Season

Everyone knows that Christmas and the holidays means pumpkin everything or sweet potato and pecan pies. At least here in the South. But this season, why not try something different? Something sure to calm the palettes down after a hearty dinner. Serve with coffee, hot chocolate or tea and sit around the tree or in the family room talking about all the things you are thankful for.

~tip: add a bit of pomegranate seeds for festive color and extra crunch and taste.


A southern staple, add some sliced strawberries.

My Ma's Southern Potato Salad

Just in time for the 4th of July, this simple southern classic is a sure win at your bbq!


I must admit...I am not a fan of potato salad. In fact, I have never tasted it until today. It is one of those things that makes me question if I am really Southern. I mean, who in their right Southern mind does NOT like potato salad? You only see it at every single potluck, party, office shindig, family reunion and gathering here! At any event, someone is sure to have a casserole dish full of this potato-ey tradition.

But here I am, posting a Southern Potato Salad recipe for a dear and awesome reader who requested it. I can't take the honors of making this because I sought the help of my number one cooking idol...my mom. I will say this, I tried it today and I liked it! Why oh why did I wait so long!?


You will need:

6 large potatoes (peeled)
5 boiled eggs (diced/chopped)
1 stick of butter (room temperature)
1 tsp of garlic powder
1 whole sweet onion (diced)
1 tbsp sugar
1 small jar of Sweet Pickle Relish
2 tsp mustard
1/2 tsp salt
1/2 tsp black pepper
3/4 jar of mayo (less if you want it less creamy)
Paprika to sprinkle as a garnish

Boil your potatoes, drain and let cool. Then cut into bite size pieces.  I made the mistake (having never made this myself and thinking I would save my mom some prep time) of cutting the potatoes before boiling. My mom threw a fit and said that it would bring about a mashed potato type consistency....which it did. But hey, it was still tasty as heck.

In a large bowl, add your ingredients. There is no rhyme or reason...no method to the madness...just add everything into a large bowl and mix.








Place the mixture into your serving dish. Top with a sprinkle of paprika and some sliced eggs if you like. Wrap tightly with plastic wrap or cover. If not covered, it will get that crusty mashed potato layer that although is perfectly fine, looks like the server was too busy to mix it to keep it fresh.

Refrigerate.

Make sure you keep this dish cool until ready to serve.




Everyone here in the South swears by potato salad. They love it. I am kinda liking it too.

Cranberry Kolaches

A few years ago I took my mom and children to an itty bitty town called Taylor in Texas. It is her hometown and while there visiting, I went to a local bakery for breakfast and had kolaches. They were so good. Light doughy balls of goodness with rich topping. Oh yes.

Being in Mississippi, I know of not one place where I can get these soooooo after all these years (and feeling a bit better about my bread making capabilities, I gave these a shot.



Recipe adapted from A Taste Of Home Bohemian Kolaches Recipe

Cranberry Filling
1 Cup of Cranberries
1 cup water
1 tsp Vanilla
1/2 cup Sugar

Dough
1 cup warm water
4 1/2 tsp Active Dry Yeast
4 cups All Purpose Flour
1/4 cup softened butter
1 tsp salt
1/2 cup sugar
4 egg yolks

In pot, add in cranberries, vanilla, water and sugar. Bring to a boil and stir until all cranberries have popped. Turn off heat and allow the cranberry sauce to cool.

In a bowl, add 1cup of warm water, 1 tablespoon of sugar and yeast. Mix and allow it to sit until foamy for about 10-15 minutes.

(The original recipe called for more water, but I did not need any more water or milk added once I added in the yeast mixture.)



Add in 1/2 cup of sugar, 1 cup of flour, yolks, salt, butter. I have a mixer, but I mixed by hand with a rubber spatula. Add in flour 1/2 cup at a time. The original recipe called for more milk, but I did not have to add more water or liquid. I added in the flour until a sticky ball of dough formed.

Once dough was formed,  turn out the dough onto a lightly floured surface. Knead for about 10 minutes and then place in  a bowl  greased with olive oil. Cover and let rise for about an hour or until it doubles in size.

Once it has doubled, remove dough so it falls back down and place back in bowl for another hour, covered.



After that turn once again on floured surface and flatten out the dough until it is about an inch or half an inch high. Cut out your circles and place on your baking sheet.  Allow them to rise once more and then pressing in center, create a indention. I used a shot glass covered in olive oil to make the indention. Fill with your cranberry filling and bake for about 15 minutes until golden at 350 degrees.



I added a simple glaze of 2 cups of powdered sugar mixed with 1/2 tsp vanilla and 3 tsp of water.

Thanksgiving Recap

Thanksgiving was amazing. My mama threw down and the bread, cake and homemade cranberry sauce I made was a hit.  I kept the table simple by pulling some magnolia leaves off of our tree and just placing it on the table. Here is a pictorial recap. Oh yeah.


My mom's friend made a four layer caramel cake. If you are in the South or from the South, you know that these are HARD to come by. Not many people make them since the caramel is soooo tricky. Caramel cake is completely homemade. There is no box cake mix used and no caramel wrapped candies used in the icing. It is one of the most perfect cakes EVER. This is one cake that I am determined to learn how to make next year. It is also one of my top three favorite cakes ever.







My mom spent two days smoking and grilling. She made pulled pork, ribs, chicken breasts, and leg quarters. I was in heaven. And nothing, NOTHING beats her southern cornbread dressing. It is creamy and if golden could be a taste, it would taste golden. This recipe will be going up before Christmas. I hope she shares with me!

Made It/Loved It: Real Mom Kitchen's 30 Minute Dinner Rolls

One of the things I look for when searching recipes on line is how many people actually tried it and if they liked it.  That is one of the reasons why I post when I try a recipe from someone else or even adapted from someone else. I want to be helpful and let them know how it was for me. Well, today I have another hit that is quick, easy and simple : Dinner Rolls found at Real Mom Kitchen.


Of course, I have made it no secret that I love bread. I made two dozen of these today and tonight ending up having to make two dozen more because my kids had INHALED them all at dinner time. When the kids did not leave so much as a bread crumb, this mama knew this was a winner.

And it is so easy!  So if you are looking for a quick and easy dinner roll recipe to make for Thanksgiving, give these a try. These have already been added to my recipe book for my kids.

Fourth Of July Recap...We Have Hungry Dogs...

I hope you all had a fabulous Fourth of July. For those not in the States, this is when us Americans celebrate our Independence with a load of grilled and smoked meats (especially in the South) and mini US flags lining the Main Street in our town (especially in the South). We celebrate with food and fireworks (if you are in the County...it's a big no-no in the city limits unless you want to get fined or have the cops called on ya) and we have such a great time with our family. It is a joyous event and holiday.

I am so thankful for my mother who started at 5 in the morning getting our bbq grill ready and slow grilling our babyback ribs until they literally fell off of the bone (seriously, our dogs ran to gather the meat when it literally fell to the ground...off the bone...). She was amazing.

Here is our recap...minus the fireworks we bought and popped outside the city limits to celebrate.

You have to have Corn. Afterall....it is a vegetable, right? We all need our veggies.


Seriously, my mom had the meat falling off of the bone. Sheesh, she is good! Her secret, she said, is marinating overnight and placing on the grill for 4 hours.

This stuff is good. When you don't do homemade, it rocks.


I told ya it fell off the bone.
