Chipotle Lemon Pepper Chicken with Plum and Jalapeno Salsa

Today for dinner, I wanted chicken but had no idea how I wanted it. I spied the bag of charcoal and made my way outside in the backyard.



You will need:
For the Chicken
Chicken breasts (I used 6)
1 can of chipotles (chopped)
2 lemons
4 tbsp lemon pepper seasoning
1 tbsp salt

For this chicken, I seasoned the cleaned chicken breast with fresh squeezed lemon juice (1 lemon) and lemon pepper seasoning with salt. Make sure to sprinkle evenly to coat the front and back of the chicken. I then chopped up a small can of chipotles in adobe sauce. I spread the chopped chipotles and sauce over the chicken and and placed them on the hot grill with fresh slices of lemon on top.

Squeeze lemon juice on the chicken every 15 minutes until done. You can also sprinkle more lemon pepper seasoning on it as well. I like a tangy lemon taste, so I added just a bit more.  Also, reserve some of your chipotle sauce to brush over the chicken once after you flip. Cook until juices run clear.  You can also cook these on top of the stove or bake.



For the salsa, I peeled one sweet plum and diced it. I also chopped one fresh jalapeno pepper and 1/3 chopped onion. Squeeze the juice of one lemon and add salt to taste. Mix well and serve over your chicken.



My mother is not a fan of chicken breasts, because she says they are dry. She loved this so much and said it was really moist. I know if my mama says it is good, it has to be pretty good.

Family Movie Night & Wings

I serve my wings this way, with fried new potato wedges, some veggies and toast. 

My family loves movies. We watch some of everything. I used to be really restrictive of what my children could watch, but as they get older, our spectrum continues to expand. While we love horror movies (especially badly acted ones that we can poke fun at), we love a good family movie with adventure.

Spirited Away

We like this movie because not only does it have magic in it, it has a good story to it. One courageous girl, lots of weird looking and fun characters and of course a quest that she has to complete.


City Of Ember

While we do a lot of full meals around here, movie night is a chance for us to indulge. We like the food to be fun and usually something we can eat with our hands. So we grab the paper plates and go to town.

Chipotle Lime Chicken

Since the Fourth of July is right around the corner, I thought I would reshare this post from last year. This grilled chicken is moist and so good!*

I live out in what we call the 'country'. Here in the south, saying you are from the country means you live on the outskirts of town, in a rural area. Really, not that rural since I am less than a mile from the local college, but still, the peace and serenity that comes with where I live is soooo amazing. Dirt, rock road and a huge yard that is perfect for entertaining...minding that the grass is cut. 

I love having family and friends over and cooking for them. Dinner, lunch and food all mean to me, a time to really connect with one another. Any excuse I can get to bring us all together for some good times, I do. 

I made this chipotle lime chicken for some family not too long ago and I am still licking my lips just thinking about it. If you love the tartness of lime, the spiciness of chipotle and the smokiness of grilling, then ooooo-weeee this is for you.



You will need:
boneless skinless chicken breasts
6 limes
1 can of chipotle in adobo sauce (chopped)
Creole Seasoning

After rinsing and cleaning your chicken breasts, place in a container and squeeze the juice of two-three limes on them. Sprinkle about 2 tbsp of creole seasoning (or salt and pepper) on the chicken and rub into the chicken. Seal the container and refrigerate for an hour while you fire up your grill. Once the grill is ready, slice up a few limes, lay one to two limes down on the grill and cover with a chicken breast. In a small bowl, squeeze the juice of three limes, mix in your chopped chipotle and sauce. Mix well. Every 10-15 minutes until chicken is done, coat the chicken with the mixture. (You want to do this when you turn the chicken over.)  Grill chicken until when poked with fork, the juices are clear and not cloudy or muddled. Serve with fresh slices of lime and parsley as a garnish.

Seriously, this is so good. Add a little bit of honey (1 tbsp) into your sauce mix for a subtle sweetness.)
