Grilled Chicken Noodle Soup: Holiday Leftover edition

Christmas is officially over and we are now looking forward to the new year. The day after Christmas sometimes we just don't know what to do with leftovers but sometimes they can make a nice hearty and delicious soup! I made a chicken noodle soup to help warm my kids up during these cold Mississippi days and it was perfect. Of course, I used leftovers but you can easily make this soup with the ingredients fresh.

For Christmas dinner I made pineapple honey glazed carrots, brown sugar and bacon green beans, grilled chicken. I made much more, but these leftovers made for a perfect soup! I also had grilled huge onion steaks that I chopped up for this recipe and oh my word...yes! 




You will need:
3 grilled chicken breasts
2 cups of steamed green beans (crumbled bacon optional)
2 maggi chicken bouillon cubes
6 cups of water
1 bag of egg noodles
4 roasted carrots sliced
1/4 of whole onion, chopped

Pour water in large pot and add bouillon cubes. Bring to a boil and add in noodles, reduce heat to medium. Chop carrots and add them to pot. Chop beans into thirds and add to pot. Add your chopped onion and then dice your chicken. At this point, you can taste the liquid in your soup and add a little salt/pepper to your liking.  Reduce heat to low and serve hot once noodles are tender.

Since you are cooking with already cooked ingredients, this soup does not take long at all. Just wait for the noodles to become tender and voila! You are done!

Quick easy idea and great way to use leftover chicken you may have. If you have fresh carrots, skin them and you can bake them in a little olive oil at 350 until tender, so about 40 minutes. You can also use frozen carrots and beans.

My Holiday Playlist...Music....

The other day I shared a link to holiday music and stories perfect for kids. Today or tonight rather, as I finalize my new year's eve cards, I share my personal picks of holiday music. Oldies mixed with a little bit of today, music calms me and is one of the things that really gets me in the spirit. With Christmas being a mere couple days away, I thought I would share what I am listening to.

And It Just Went Down: Chimichurri Sauce

And it is over. Oh my word...can I even type after having this meal? I am trying here! This was my second time making chimichurri sauce. The first time I made the horrendous and oh-no-never-ever-again-will-I-make-again mistake of using dried herbs. Trust me, dried does not work. Fresh, all the way. It is easy and simple to make and adds a nice tartness to a nicely prepared steak.

The first time I heard of this was earlier this spring. I was set to photograph a groom's luncheon for a local magazine here at a cabin deep in the middle of nowhere. Christina Lucas, the food contributor began plating this seriously yum array of foods and when she popped open a container of liquidy green-ness, I wondered what it was. Here in the South, I had never seen it before and when she said the name of it, I tried it and BAM. I was instantly in love.

Chimichurri sauce is originally from Argentina and is commonly served over steak or with steak. I first tasted it with chicken and it was just as good on that.

It seriously went down over here. I seasoned my ribeye with a little creole seasoning and plopped it in the skillet on medium heat. I like mine well done, but went a little bit under that for this one. I wanted it to be juicy.

I paired a little bleu cheese butter with this and now all I can ask is, "Is it bedtime?"

I used the chimichurri recipe from this site and I give it 5 stars. Will definitely be offering this sauce as a pairing with my steaks in the future for guests.

Ingredients:
2 cups fresh parsley and/or cilantro, firmly packed
1/4 cup fresh oregano leaves (optional)
3-6 cloves of garlic
2 tablespoons chopped onion
1/2 cup olive oil
2 tablespoons red wine vinegar (optional)
1 tablespoon lime juice (optional)
Kosher salt and red pepper flakes to taste
Preparation:

Pulse the garlic and onion in the food processor until finely chopped. 

Add the parsley and/or cilantro, and oregano if using, and pulse briefly, until finely chopped. 

Transfer the mixture to a separate bowl. Add the olive oil, lime juice, and vinegar, and stir. (Adding the liquids outside of the blender gives the chimichurri the correct texture. You don't want the herbs to be completely puréed, just finely chopped).

Season with salt and red pepper flakes to taste. 

Store in the refrigerator until ready to serve.

*I hand chopped mine with a knife and the herbs still were small enough, so grab a knife if you do not have a food processor and carefully chop away.

While he was supposed to be watching tv in the den, I rounded the corner from the kitchen into the living room to find my oldest son digging into the bag of wrapped gifts. I slowly backed away, went and got my camera and stealthily came back and snapped this photo. I could not help but laugh and remember those days when I was his age. He so did not inherit my gift peeking skills because by the time I was his age, I had mastered the fine art of unwrapping corners in effort to uncover the mystery contents within those beautifully wrapped Christmas gifts. Much to learn, dear child, much to learn. 

Oh how I love this time of year...like seriously. When I was a kid, I loved the anticipation and presents but now that I am a mom, it is the anticipation of my children's anticipation and it is the joy and sheer niceness that people seem to exude this time of year. The music, the food, the parties, the gatherings, it all is what makes this season so great to me...and the topper that is the icing on the cake is that my children and I get to enjoy the TRUE meaning of Christmas....they understand it, I love it...we share it.

Smores Hot Cocoa

During the cold holiday months, I keep stock of hot cocoa mix. Year after year, my cabinets are filled with the premade boxes for hot chocolate.  My kids run through them like air. I mean, easy enough, right? Buy a box of packets, kids can microwave their drinks. Yeah, easy peasy. But what is even easier and more economical is making a huge batch of your own mix. Besides, everything tastes better when it is made by you!  

So there I was in the grocery store about to toss 4 boxes of hot cocoa mix in the basket when I remembered, heck, I have sugar, I have chocolate, I have cocoa. Literally, I had some kind of mommy-culinary-I-am-going-to-save-money epiphany. I put the boxed packets back on the shelf and put in a box of dry milk instead.

When I got home, it took all of a couple minutes to mix up enough hot cocoa mix to last us two weeks...and that is with 4 kids! I used a variation of a recipe from the Brown Eyed Baker. Seriously, it gets no easier and I like to think I saved a few bucks in the long run. I mean dude, a lil bit of unsweetened coco goes a long way!


You will need:

3 cups nonfat dry milk powder
2 cups powdered sugar
1½ cups cocoa powder
1/2 tsp cinnamon
1½ cups chocolate chips (I used mini chocolate bars...the kids loved that)

I mixed the dry ingredients in a bowl and placed in an airtight container (mason jars, here). I keep the mini chocolate bars in the pantry so that when I am ready to make the cocoa, I give a bar or two to the kids and let it melt and stir in their cocoa.  When you are ready to make it, just add some hot water, add in and stir your chocolate and yum!!

For the s'mores hot cocoa, I made the hot cocoa, topped the oven safe cups with a heap of marshmallows, then placed in the oven with it on broil until they browned. I topped with crushed graham crackers, a graham cracker and chocolate bar with a little of chocolate syrup drizzle. Yes, please.

Oh, How I Love The Holidays: Music

This truly is one of my favorite times of the year. Growing up, my mother had a special stereo system put in our house. There were speakers in the ceiling of each room and we had volume controls in each of our rooms. I loved it most times....thanks to the volume control but oh no, sometimes my mother would tell us not to touch the controls. She wanted to hear what she was playing no matter which room she was in. The only time I really did not mind was the holidays. I loved hearing all the sounds of Christmas follow me from room to room and it really helped get me as a grumpy know-it-all teenager enjoy Christmas even more.


I don't have the speakers and stereo system that goes throughout the house nowadays but I do have the stereo in the kitchen during the holidays. I love listening to oldies mostly. Nothing like an old fashioned Christmas!



That brings me to this site. I found it many, many years ago when my children were really small. I download their Christmas music and stories and before bedtime, my kids listen to one of the albums. The stories truly are the BEST.


The site is Kiddie Records and they have all of the vintage, retro records from days gone by...before television was in every home, when radio was big family fun and before all of these techy gadgets took over. It is soothing and it is FREE. What is so neat is that you can also download for free the album art.

Check out the site, they have more than just Holiday music, but tons of great stories and poems and music that they pulled from albums that are now hard if not impossible to find.

When it comes to the holidays I love good food with good friends and family. My children are getting older with the youngest being nine (Where the heck did time go???!) and although they still love cutesy foods and things, they lean toward a bit of youthful sophistication, lol.  I made these this summer for the current issue of Yum Food & Fun  For Kids, the Holiday issue. Easy Chocolate Covered Waffles

Who said that a nice winter treat has to be hard? I went to the local grocery store this weekend and found a huge bag of vanilla Belgium waffles. These are like little bursts of heaven in your mouth. No need for syrup, they have a cake like texture that is divine. Yes, please!  My kids are in love with them. Being that it got extremely cold here (literally, overnight...one day it was 70 degrees and the next 36) I made the kids hot cocoa after we lit the tree for the night. Can't just serve em hot cocoa, so I pulled the bag of waffles from the freezer, melted some white chocolate chips and crushed some peppermint. Instant waffle-y goodness and even some marshmallows!

Melt 2 cups of white chocolate or chocolate chips in a double boiler ( I never have luck microwaving chocolate)

Crush your peppermint of candy cane and place on a plate.

Once chocolate has melted, dip your waffles in it or spoon and spread it over the waffle. Coat in crushed candy and place on a wax sheet to dry.

Easy peasy. Told ya!

I used Martha Stewart's Hot Cocoa recipe minus the salt.

Pinterest Love....Christmas Dinner Love

I absolutely love pinterest. I have the Chrome button installed in my browser so I can pin no matter what site I am on. It is just so darn easy to do and I love that it saves all my favorites in one organized spot!

I did not do Thanksgiving dinner. I was out of town photographing for a commercial client and did not make it back until the late evening before Thanksgiving. I am so thankful that my mom stepped in and threw down in the kitchen! She put  her foot, arm, leg and head in that meal! YUM!

Since she helped me out and did Thanksgiving, Christmas dinner is up to me. I have been pinning like a mad-woman thinking of ideas and thought I would share my finds with you. I want to go a different route than we usually go so I have pinned some things I have never ever ever had that I really want to try: *cough* beets *cough*

Christmas Is Coming!

Thanksgiving is done and I am already thinking of Christmas dinner. I was supposed to make Thanksgiving dinner but the photographer I sometimes moonlight as had me all the way in Georgia until the night before. Fret not did I (sometimes I like to speak in the ways of yesteryear---see I did it again) for my mama came to the rescue and made dinner for us. 

I am beat, tired, exhausted, thankful and still full. I will be back in the next few days sharing things I found on pinterest and the vastly informative world wide web to get the holiday juices flowing. 

Hotty Toddy...Cold Reliever...

My mom is old school. By old school, I mean she is one of those moms who swears "An ounce of prevention equals a pound of cure". She believes in treating it before it hits ya!  

Today the bus ran just as it does any other day and just as it does on any other day, it blows its horn to high heavens until I peek my head out the door. Once I make an appearance, the driver waves and opens its doors to let my youngest off. It is something new the school district has implemented in these parts. No younger student is allowed off the bus until a parent shows their face. So there I am, standing in all my unprepared ragginess (hat atop my head, ripped jeans) waving a "hello! I am here!" to the bus when my baby girl literally slumps off of its steps. She looks as though she is about to cry and I immediately bombard her with questions..."Did someone bother you....was the bus driver mean? Did you have a bad day at school? Are you upset?" After the drill, she finally opens up to my mom, she is not feeling well. We take her temperature and it is 99 degrees. My mom declares a state of emergency, and breaks out the 'cure-all'.

The cure....a hotty toddy. A drink so potent yet so delicious that it will knock a cold straight out. My mom swears by it. She lives by it and tonight she had me make it.

I must say, it did indeed make the little on feel better. This time of year, we keep the ingredients to make this in stock. It is said to help with cough, sore throat and stuffiness.

You will need:
One orange (sliced)
1 cup of water
1/2 cup of lemon juice
2 tbsp of sugar
1 tbsp of honey
3 cough drops
3 peppermints
(for the grown ups.....add in a bit of peppermint schnapps)

Add everything into a small pot and bring to a boil. Stir consistently to melt the cough drops and peppermints. Once boiling turn off the heat. Pour into a mug and garnish with an orange slice. Serve warm.

Simple Grilled Fish Salad...

I love a good salad. I usually serve a small side one at every dinner my kids and I have. I guess it's my way of trying to sneak even more fresh greens in. Since we do quite a bit of these bad boys, I love adding different things to them. This one was so good. Grilled tilapia that I seasoned with a bit of salt, pepper and olive oil, fresh jalapeno hush puppies, tomato, avocado, and super mean greens. I dressed with fresh lemon juice, sea salt and pepper. Nom. Nom. Nom.

Why oh why did I just start eating avocado at the beginning of this year? Where oh where was my crazed mind at?! Now I can't get enough of 'em.

There is no recipe for this, just create! What are some of your favorite salad combinations?

Freebie Friday: Printable Recipe Cards

Earlier today I started flipping through some cookbooks that I got at our local library for twenty-five cents each. As I looked through the outdated photos and recipes, I saw many that I liked. As I folded down the corner of pages featuring recipes I liked, I thought, hmmmmm, I should write these down. For my birthday a great friend surprised me with flowers, my favorite candy and a recipe box. The style of the recipe box was not particularly my style but I love it. Too bad I have never used it... Ok, back on track...so I am flipping through the cook book, folding down pages and I decided then and there that I need to keep track of these recipes. Sure, I post them online, but what happens when the internet is down and you can't pass down websites and internet information to family like you can a recipe box full of handwritten or neatly typed dishes for them to try, remember and in return pass on. 

So, I made these cards. I love them. I cannot wait to take that extra time to jot down recipes that I make, I find and put them in my recipe box. It should make for some good memories and something I really want to pass down to my kids.

My family loves a good soup or stew so I have been online searching for more bowls. Who would have thought that the girl who once spent her time looking for new shoes would be so darn thrilled over the mere premise of shopping for bowls? Who has replaced me? Easy Falafel...

I am always up for trying new things. Unless it is maggot cheese or something that reminds me of roadkill I am all for it. I love trying and introducing my family to meals that are not common in Mississippi. Thus we land on the falafel.

I was watching the food network one night and they were going over restaurants and their popular dishes when they showcased a diner that specialized in falafels. I was curious....what the heck is this tasty looking meatballish creature/recipe/meal-a-bob? I decided to try it. My kids were pleased. When you are a parent, pleased kids says a lot about your cooking.

I tried the recipe from food network and loved it. 

Recipe copied from Food Network:
Ingredients
2 1/4 cups cooked chickpeas
3 scallions, coarsely chopped
1 large clove garlic, coarsely chopped
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
3/4 teaspoon cayenne pepper
Generous 1/4 cup coarsely chopped parsley
Generous 1/4 cup coarsely chopped cilantro
1 egg
1 lemon, juiced
Kosher salt
1 1/2 teaspoons baking powder
1/3 cup flour, plus 1/4 cup flour for shaping patties
Vegetable oil, for frying
Lettuce, for garnish
Chopped salted tomatoes, for garnish
Grated cucumber, for garnish
White Bean Yogurt Sauce, recipe follows
Directions
In a food processor, combine the chickpeas, scallions, garlic, cumin, coriander, cayenne, parsley, cilantro, egg, and lemon juice. Pulse to combine and season with salt. The mixture will not be smooth, but it should not have large chunks.

Add in the baking powder and 1/3 cup of the flour and pulse to just combine. Remove to a bowl and chill in the refrigerator for 30 minutes.

Remove the chickpea mixture from the refrigerator. Add enough oil to a large saute pan so it reaches 1/2-inch up the sides and heat it over medium-high heat until an inserted thermometer reads 360 degrees F.

Meanwhile, drop spoonfuls of the chickpea mixture onto a plate with 1/4 cup flour. Roll into balls on the floured plate and press gently into patties. Fry in batches of hot oil for about 3 to 4 minutes each side and drain on paper towels.

Serve the falafel on a bed of lettuce with chopped salted tomatoes, grated cucumber and White Bean Yogurt Sauce.

Creamy White Bean Yogurt Sauce
3/4 cup cooked white beans
1 small garlic clove, coarsely chopped
1/4 cup plain yogurt
1/2 lemon, juiced
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Puree the white beans, garlic, yogurt, lemon juice, and olive oil in a mini food processor until very smooth. Taste and season with salt and pepper. Serve with falafel or as a salad dressing

Easy Stuffed Taco Poblano Peppers

My mom is from Texas. She left when she was 17, married and moved to Mississippi. She is a big time lover of all foods Spanish and Spanish inspired. Whenever I invite her over for dinner she always asks, "Are you making Mexican?"  Seriously, if she asks for one more burrito...

Since she is always asking for it, I try to find recipes I can try that will keep it less boring for me. I made her stuffed peppers not too long ago and she loved them. I kept it simple (although in my mind I was creating something just as spectacular as the Chile Rellenos I love from my favorite joint around here).

This is easy, only a few ingredients and can be stuffed ahead of time and then baked.

You will need:
Poblano Peppers 
3 cups of ground beef
1 packet of taco seasoning
1 cup of cooked Spanish rice
2 cups of shredded cheese
1/2 cup salsa

Rinse your peppers well and then cut a slit down the middle. Using a spoon, scoop out the vein and seeds. Discard the seeds. Set peppers aside.

In skillet, begin browning your ground beef, and drain the grease. Lower heat to low and add taco seasoning and then salsa. Stir well. Remove from heat. In a bowl combine cooked rice with ground beef and then add 1/2 cup of shredded cheese. Spoon mixture into the peppers. Place on baking sheet.  Bake for about 45 minutes, then top peppers with remaining cheese and bake for about 20 more minutes.

Makes 6 large peppers.

And there you have it. I serve mine with a bit of rice and a nice side salad.

Random....

These are my children. These are the loves of my lives. These are also known to wreak havoc and claim that all of your belongings are theirs. 


Here I am sitting in the airport waiting on my ride to come pick me up and take me home. I left for only 4 full days but somehow those 4 days seem like not enough time all while seemingly lasting a lifetime. I made a trek to New York City for the first time e.v.e.r. and where has that city been all of my life? I usually do not do touristy things and my last night there was spent with me hanging with the locals in lower Manhattan with not a tourist in sight. It was good. I took lots of photos, met some amazing people and had a generally great time. But, one thing is certain, as I sit here in this airport I can only think of one thing:

Getting home to see my babies. Even if they are not exactly babies anymore, I cannot wait to see the smile of my children and I know they will smile extra big because mama came back bearing gifts.

Ohhhh, have I mentioned how excited I am about this cool weather we are having. Soup season! Yes! Now if I can decide which set of bowls to get from Williams Sonoma.

School Lunch Idea # 5

I do not make lunches everyday because sometimes, my kids are all into eating what the school has planned. That really does help me out when they decide not to take a lunch, but I do love to make them meals to take to school. 

This is premade three cheese tortellini with pepperoni and ranch alongside carrots, roasted peanuts, grapes with fruit gummies and a baby clementine with white cheddar cheese. Oh and a yeast roll! Can't forget the yeast roll. 

I wrapped the roll in wax paper and then packed everything up. I think the kids will like it.

School Lunch: Leftover Pasta

Here is another idea for a lunch. If your children do not mind cold pasta like mine, then this is perfect. My daughter loved taking this to school and said it was perfect by lunchtime. I packed it with an ice pack and by the time lunch rolled around it was not as cold as I thought it would be. She enjoyed it and asked for more pasta for lunch.

Best Burger Ever....

I am a huge fan of making sandwiches and burgers. They are super easy, most of the time really quick to make and there are just so many delicious possibilities.  I was on a bleu cheese burger kick but last night I had a bag of sun dried tomatoes that I had left over from a dip I made and I wanted to use them. To me, sun dried tomatoes can be a bit too chewey for my liking but I decided to saute them with fresh cut mushroom and sliced red onion. Oh my--WIN!


You will need:
Sun dried tomatoes 
red onion (sliced)
mushrooms (sliced)
Creole Seasoning to taste (You should be able to find this at your grocery store...it is called Creole Seasoning--any brand)

(For one burger I used: 2 mushrooms, 1 slice of red onion (about 5 rings), 1 tbsp of sun dried tomato)

I cooked my burgers as I normally do...I use a griddle to cook them on. After they were done, I did a quick wipe down of the griddle and added the onions, mushroom and tomato with a dash of creole seasoning. Cook until mushrooms are tender and onions become translucent. 

I used King Hawaiian Hamburger Buns toasted, added a little lettuce, my burger with pepperjack cheese and topped with my new favorite burger topping. This was so good, I think my mouth started convulsing a little bit.

Back To School Lunches:Creative Sandwiches

Back to school in the South, usually means starting school at the beginning of August. Soooooo, we are all in full school mode here in Mississippi. What better way to kick it all off than with fun and easy school lunch ideas for your little ones?! I mean seriously, I want to pack this as my lunch. So easy and in a few minutes your kids can have their favorite sandwich with a twist.


I teamed up with S Is For Sweet and we made two super simple lunch sandwiches. A straw, cheese cut into shape with your favorite knife, fruit and yummy drinks and veggies and voila, who needs completely store bout meals? Not you! You can do this yourself and buying in bulk or packs can save you money. :)

Pinterest Round-Up: Delish Served Pinterest-Style

So, I admit...I am a pinterest addict. I don't pin everyday, but by golly, I do find the time to check out pinterest daily. I am all over the place when it comes to browsing the vast world wide web.  I look at everything from children's party ideas, food and recipes, clothing and style trends...to now as of late, back to school lunch boxes.

I mean seriously, there is so much to pin and so little time! So while I sit here, typing, kids are in the living room each doing their own thing before we get dinner ready, I am going to share some of the things I have pinned in the last week.

OMGosh dang delicious! I love deviled eggs. Here in the South you can't go to any party, potluck or event without someone bringing in a tupperwear container full of these badboys. Usually very traditional, when I saw these Bacon Jalapeno Deviled Eggs(clickity-click, it's a link!) on pinterest from Real House Moms I was like "Whoah...yes, please!". Bacon. Jalapeno. Eggs. Nuff said.


This cake reminds me so much of my wedding cakes many, many, eons ago.  I had a rustic outdoor backyard wedding with a bbq reception. The cake was like this...filled with a rich nice cheesecake cream and orange marmalade. It was finished with fresh berries and flowers. What I love about the cakes over at Miss Ingredient is that they are rustic, simple, elegant and looks just so refreshing! I have never been a fan of fondant, I love the simple cakes with old world feels to them. I had to pin this cake when I could literally taste it by looking at it!

So Easy A 4th Grader Can Do It: DIY Nutty Buddy Cones

I'm a homeschool mom. Nope, I do not fit any generalized ideals you may have but I can see myself slowly morphing into the figure that fits some of your thoughts. I have four children and out of the four I homeschool one. Yes, only one. He is the last male pea to be produced in my pod and he makes me happy, happy.

Being that I homeschool my little skillet means he gets to try my kitchen experiments before his brother and sisters. Usually all of this high level clearance cooking takes place around noon...after I have had about ten cups of coffee (loads of sugar and a little heavy whipping cream), caught up on my email, and read cnn.com backwards and forwards at least three times. Don't worry, he is never left to his own vices unless you consider 'his own vices' to be him doing school work while mommy activates via the power of crushed coffee beans and hot water. So, getting back on track, because, well, I tend to lose track easily and I seriously need to get to the point....homeschool means my son gets to be my primary test subject.

I pride myself in the fact that my kids have some well rounded taste buds. I get to experiment, they get to test and they normally like it. While the other kids are in school, my son and I take time to play Master Chef and we sometimes pretend we are on an episode of 'Chopped'....I pull out random ingredients and we try to come up with something cool, edgy and tasty. Typically it works.

Sometimes we recreate recipes we see online (we meaning I and he gets to be the focus group consisting of...one). Sometimes we find what you can buy at the store can be too easy to make at home. And really, the joy of letting your kids help out is way to fun than just telling them to go in the fridge and dig it out already made.

How about these bad boys? So easy it is crazy. All you need is ice cream, Magic Shell (#clickablelinkherefolks), and nuts. Yes, nuts...or dried fruit....or sprinkles...or tofu....hey, whatever floats your boat. Take your cones, fill them with a scoop or two of your favorite ice cream, dip in magic shell and roll in nuts. Dude, I told you it was easy. Place in the freezer or eat immediately. So easy a 4th grader could do it. See...I have photo proof. A fourth grader did it.


Easy Beer Battered Fish

I must admit, I love Captain D's fish here in my town. It is so good, crispy with a somewhat buttery rich flavor. It is one of my guilty pleasures. Here in the south, fried fish is 99.9% cornmeal breaded and fried. If you want beer battered or battered fish, Captain D's is the only place you will find it.  So I wanted to see how easy it was to make. I found some recipes online but thought, I wonder how pancake batter would work. I used buttermilk pancake mix and added in a can of Bud Light Lime.  I used tilapia but you can use cod. I first dipped the cleaned fish into dry flour, then into the batter, I fried it in vegetable oil until golden brown. I removed from the grease and placed on a paper towel to remove excess oil. I served with fresh and crudely cut potatoes I fried in the oil as well until crispy.

This was seriously some easy and good eatin'!
