Super Bowl: Twice Baked Kyvan Sweet Potato BBQ Chicken Baby Potatoes

9:50 AM

I am not a huge football fan.  As a college student, I went to one game and I do not think I stayed the entire game. Here in the South though, everyone is die hard about their football, basketball and baseball,  so the Super Bowl is a huge thing.

We always throw a Super Bowl party.   Of course, for me it is about food but for my kids, family and friends it is about whose team is going to smash the living daylights out of the other team. Loads of yelling at the tv while lauging with each other and of course, some good game day eats.

Here are some things my oldest son tested with me yesterday to make sure they could go down on the menu. They were a huge hit and we can't wait to have these again for game day. And one thing rings true abut the South, we love football and bbq. These game day treats are the perfect combination of cheesey potato goodness with amazing bbq flavor.

Twice Baked Sweet Potato BBQ Chicken Baby Potatoes

One Bag of Baby Potatoes
Kyvan Sweet Potato BBQ Sauce
Salt & Pepper to taste
1/2 - 1 cup Sour Cream
1/2 cup of Shredded Cheddar
2 boneless skinless chicken breasts
3 tablespoons Kyvan Dry BBQ Rub
2 tablespoons Butter
Micro Greens

In a meduim size pot of water, bring the baby potatoes to a boil then reduce to meduim heat. Cook for twenty minutes until potatoes are tender.

Remove potatoes from water and allow them to cool.

Once cool, slice the potatoes in half and use a spoon to scoop out the insides of the potatoes.  Place what you scoop out into a bowl.

Add in sour cream, salt, pepper, cheese and mix well. Should be thick and creamy. If dry or too chunky, add in more sour cream.

Set potato mixture aside.

In skillet on meduim heat, cook your chicken breasts with dry bbq rub and butter. Cook breasts until done. Allow to cool once removing from heat and then shred the chicken.

Coat the shredded chicken with 1/2 cup or 1 cup of bbq sauce.

Line the potato skins on a baking sheet and scoop in a spoonful of the potato mixture. Top with shredded cheese and a half a spoonful of chicken. Place in oven and bake for 5 minutes at 350 degrees.

Serve hot and fresh, and add a garnish of microgreens.

We also did a variation of this added by sprinkling Kyvan Dry BBQ rub over the potato mixture and baking plain.  After they were removed from the oven, I added a piece of bacon that had been cooked after being sprinkled with the rub for a nice smoky bbq flavor.

One potato, two ways!

Philly Cheesesteak Empanadas Attempt 1

12:08 AM

I am a sucker for a philly cheesesteak.

Being a mama and a lady who likes to throw parties, I am always looking for things to make that can act as snacks or appetizers. My cousin told me a couple years ago that one of her favorite appetizers were empanadas. I had never had one but immediately upon consulting google, I feel in love.

Of course, I will try and make more traditional versions but I had a hankering for some cheesesteak. I had flour, I had meat...I had time. So cheesesteak empanadas it was.

This is super easy and tasty...and perfect for parties.  And the sauce....not your typical cheese whiz....a little heavy whipping cream and smoked gouda with some cheddar makes it delicious.

I used this dough recipe from Laylita.

Ingredients
  • 3 cups all-purpose flour
  • ¼ teaspoon salt
  • 6 oz unsalted butter (1 ½ sticks), chilled and cut into 12 pieces
  • 1 egg
  • 4-5 tbs water
Instructions
    Making homemade empanada dough:
  1. Mix the flour and salt in a food processor.
  2. Add the butter, egg and water until a clumpy dough forms.
  3. To make the empanada dough by hand, follow the same instruction but use your hands to mix the ingredients together. To make it easier to incorporate the butter you can freeze it and then grate it into the flour mix.
  4. Form a ball, flatten slightly, and chill in the refrigerator for about 30 minutes.
  5. Roll out the dough into a thin sheet and cut out round disc shapes for empanadas (use round molds or a small plate).
  6. Use immediately, or store in the refrigerator/freezer to use later.
  7. Assembling and baking the empanadas:
  8. To assemble the empanadas or turnovers, place a spoonful of the filling on the middle of each empanada disc. The amount of filling will vary based on the size of the empanada, but in general, it’s easier to seal an empanada that isn’t overstuffed. Also, the more you make empanadas, the easier it becomes to stuff them to the max and still seal them properly.
  9. To seal the empanadas, fold the disc and seal the edges by pressing the dough with your fingers. If you’re having a hard time sealing the edges, you can use brush the inside edges with egg white, it will act as a glue for the empanadas. You can also use a fork to help seal the edges, just press the top of the fork against the edges. To the repulgue or churito, the curl type seal, use your fingers to twist the curl the edges. There are also empanada molds that you can buy and will help seal the empanadas.
  10. For best results, I recommend refrigerating for at least 30 minutes the empanadas before baking – this also helps them seal better and prevents the filling from leaking out.
  11. If you want your empanadas to have a nice golden finish, then you can brush them with egg wash (a whole egg whisked or egg yolk plus a few drops of water whisked).
  12. Bake the empanadas in a pre-heated oven. I usually bake them at 375F-400F, the temperature will vary based on the oven and the size of the empanadas. I bake the smaller sized empanadas at 375F. The baking time also varies (again based on the oven and size), but it’s in the range of 18-25 minutes – the empanadas will be ready once they are golden.
(dough recipe from Laylita)

Filling:

1 New York Strip Steak (sliced, diced, chopped)
1/2 green pepper chopped
1/2 white onion chopped
2 tbsp butter
salt and pepper to taste

Cook your steak with a little salt and pepper. Allow to cool and slice and chop. In skillet, add your butter and then your sliced and chopped bell pepper and onion. Add in a tsp of salt and pepper or as to taste.  Cook until soft and translucent.

Mix in steak and cook for about 10 more minutes. Remove from heat and allow to cool.

Roll out your dough as lined above. Cut into circles. I used a ramekin as my guide to size. It was enough to make 8 full serving empanadas.  Fill with steak filling. Fold over and crimp the edges to seal. Brush with an egg white wash. Bake as above.

Cheese Dipping Sauce

1/2 block smoked gouda cheese
1/2 block cheddar
1/2 pint heavy whipping cream

In pot pour in whipping cream, add in cheeses chopped.  Cook on low, stirring until cheeses melt. Add more whipping cream if too gooey. Remove from heat and serve as a dipping sauce for the empanadas.

Bacon Jalapeno Pimento Cheese...

4:15 PM

Repost:

When I was younger, there were lots (tons---millions---billions) of foods that I would not, could not, REFUSED to eat. Eggplant was one and pimento cheese was another. My mom did not really buy it or make it a lot but when she did, those freaky looking red things turned me all the way off and I refused to even taste it. I remember pimento cheese being a staple at my mom and dad's parties and gatherings....sitting in one big massive orange blob on a silver platter surrounded by butter crackers. I did not know what it was, what it tasted like and I was not willing to try it out.

Now that I am older, creeping closer to the nursing home, I am finding that some of the katrillion things I hated as a child, I now love. I mean, who would have thought I would actually like cooking with onions!? I still hate--detest--despise eggplant but alas, I finally tried pimento cheese and I actually liked it. Whowouldathunkit!?

My kids are huge fans of grilled cheese sandwiches. Seriously, I have one kid who would eat them all day, everyday. Imagine the deliciousness that comes from pimento cheese, jalapenos and bacon? Whoah. Blow your mind.

Seriously. Try this. So gosh dang good.

2 cups shredded extra-sharp Cheddar cheese
 8 ounces cream cheese, softened
 1/2 cup mayonnaise
 1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper (optional)
 1/4 teaspoon onion powder
1 jalapeno pepper, seeded and minced (optional)
1 (4 ounce) jar diced pimento, drained

Mix everything together and spread on thick bread. Add several slices of cooked bacon, top with another slice of bread and proceed to cook in a buttered (or nonstick) skillet just as you would a grilled cheese sandwich.

The Sinful Burgah

10:25 PM

I consider myself The Sandwich Queen. I will make anything into a sandwich. Imagine my delight when watching a cooking channel when I saw this bad boy of a burger made by the Hukilau Cafe. It was patty, it was thinly sliced teriyaki beef, it was onions. I knew as soon as I saw it, I had to make it.

Theirs of course, include a fried egg but my family, while usually very accomodating when it comes to my cooking experiments, said no. So I left that off. I must say this was one amazing burger.

I cooked a regular burger, grilled the buttered bun, added pepperjack cheese, some onions I sauteed in Teriyaki sauce and steak strips I marinated in teriyaki sauce. Man oh, man, so gooooooood.

Add sliced jalapeno for a little kick and how awesome would some sundried tomato be on this!??? I die.

Mother's Day: Southern Style

11:51 PM

Being  a single and divorced mom of four means Mother's Day is usually spent with me doing all the cooking. Of course, I don't mind at all since cooking is something I love to do. I like to feed my family, plan something for them and the smiles on their faces knowing I made just a little extra effort is all the Mother's Day gift I need. That and of course the handmade cards from my kids...priceless.

Each Mother's Day at my place is spent with my mom. I am so thankful to her and even though I may not be able to send her on a trip around the world, what I can do is show her that I love her. I decided today to take everything back. My mom is a traditional Southern cook. She is old school. She is the master at fried chicken, comfort foods and even has mastered cooking pigtails and makes the best cornbread dressing this side of the Mississippi (no lie...her dressing is the BOMB!) When my best fried surprised me with a set of country dishes I thought, hmmmm, let me make my mama proud and cook a Southern meal.

I did just that. Got up in the wee hours of the morning (8am, yep) and started peeling potatoes, snapping beans and making biscuits from scratch. Heck, if you are going to try and make your traditional Southern mama proud you have to go back to basics. So here is what was on the menu...

Fresh cut green beans
Sour Cream mashed potatoes
Fresh cheesey yellow squash
Cabbage
Fried chicken
Biscuits
Sun tea
Cake

I made everything from scratch...except for the cake...I have yet to master baking so I used a box cake mix...dousing each layer after baking with a lemon simple syrup, topping with blackberry jam, cream cheese frosting and topping with berries and flowers.

My mom loved it and she was so impressed. That made me happy and satisfied. Everyone enjoyed it all and the cake was demolished in minutes. Even though the cake had mishaps (top layer started cracking when I was placing it....the jam ran into the icing) it all worked. I thought my mom would be a bit upset because I snagged a few flowers from her Mother's Day bouquet but she raved about the cake.

I am one happy camper. I love making a little extra effort for those I love. I may not have it all but I have my love. Today. was. a. good. day.

Shepherd's Pie

10:47 PM

I remember when I was in school, there were two days kids went absolutely crazy for during lunch....chicken nugget day and shepherd pie day. Although the latter did not have the same you-are-getting-detention-and-demerits-for-acting-a-plum-fool, shepherd's pie day was one day that we knew we would get some goodness. No microwaved cardboard tasting pizza. No sir.

Growing up in the south, shepherd's pie is one of those dishes you know you love and as easy as it is, not that many people make it. It is one of those enigmas like devilled eggs....people can make them, but they only do on special occasions. I have no idea why. I think it is a great meal when paired with a nice salad. YUM!

You will need:
12 potatoes (skinned and cut into quarters)

2 Maggi or chicken bouillon cubes
1 can of Peas
1 can of Corn
1 can of Carrots

Brown Gravy (recipe follows)

5 lbs of ground beef
Shredded cheese

In a skillet brown your ground beef with a little salt and pepper.

Drain the grease/fat and add your corn, peas and carrots.

Mix well.

2 tbsp. butter
1 c. canned beef bouillon
2 tbsp. flour
Dash salt and pepper
In small saucepan melt butter and stir in flour. Keep stirring until blended well. Add bouillon and stir until gravy reaches boiling point. Continue to stir until smooth and it thickens. Add salt and pepper to taste. Serve over meat or potatoes. Makes 1 cup.

Mix gravy into ground beef mixture. Set aside

(I add gravy because it adds a bit of moisture to a dish that can easily dry out when in the oven.)

For potatoes:

Peel and cut potatoes into small pieces. While cutting, place cut potatoes into a bowl of cold water. This will help keep them from turning brown. Rinse the water off of the potatoes several times to make sure they are clean.

Place into large pot of water, add maggi or chicken bouillon cubes and bring to a boil. Boil for about 20 minutes and reduce heat. Cook for about 30 more minutes. Drain half of the broth and reserve the other half.

Add half a stick of butter or margarine and begin to mash. If it is too thick, slowly add in a bit of the reserved broth.

Place your beef mixture into your baking dish or ramikens.

Place your pototoes on top.

Smooth out potatoes.

Using a fork, draw lines across potato layer, this will help in adding a crispy top layer with loads of creamy potatoes underneath.

Place in oven on broil for about 10-15 minutes or until the top has browned.

Add shredded cheese and place back in oven until cheese has melted.  Serve for some good ol comfort food goodness!
