Southern Buttermilk Pie

Growing up, my mom baked a lot. We were your typical Southern family, eating traditional Southern meals and desserts reflected our roots. My mom did what you would find at nearly every family reunion or potluck here in Mississippi: red velvet cake, pineapple upside down cake, brownies, sweet potato pie and pecan pies. My mom made it all....one thing she never did make was  the one pie I absolutely loved: Buttermilk. The name can be different depending on who you ask, Chess Pie, Egg Pie, Custard or Buttermilk Pie. I think of Chess Pie as having coconut, so Buttermilk is what I call it. And boy oh boy is it good. Golden custardy, buttery, sugary goodness. Seriously, the best. pie. ever. 

Now that I am older, I am wanting to try more traditional recipes....things that I just thought would be so complicated and guess what? They really aint that hard. Why did I not try this sooner!? For Father's Day and to celebrate my sister's birthday, I finally made a Buttermilk Pie. I had settled on making a Red Velvet cake when I started thinking....summer makes me think of pies.  And why not make something I have not ever tried to make and had not had in FOREVER. 

I found a super easy and simple recipe over at Add A Pinch. Seriously? Could it be any easier? It was a hit! I left out the lemon juice and zest because the Buttermilk pies I always had did not have a lemon taste to them and I wanted something that reminded me of my childhood and the only pie I would eat. 


I started with the crust. I have not tackled homemade pie dough yet and since I was in a time crunch, today was just not the day to start. I used store bought refrigerated dough.



I added a braid to the edge of one of the pies. You do this by cutting the dough into strips and then braiding. Just like you do hair.



Coat your pie edge with an egg wash (one egg white and 3 tbsp of water mixed) and then add your braids.


Press where the braids meet and coat with egg wash.



I love this technique. Using a spoon upside down, press the top of the spoon to make a decorative pattern around the edges of your pie crust.




Add all of your ingredients to a mixing bowl and mix well. Make sure you melt your butter  (which I did not do on the first pie) because if not, the pie filling looks like this....still bakes perfectly fine, but um, yeah, not too cute unbaked.


Melt your butter! 

Ahhhhhh. There we go. Much better.


Bake in the oven at 350 degrees F for 40-50 minutes until top is brown. When you remove it, the pie will be jiggly like jello, don't worry, it will settle as it cools. Allow to completely cool before slicing and then enjoy the deliciousness that is Buttermilk pie. Oh yeah!

Fried Chicken Breakfast Sandwich with Collard Greens

When I was in college and after I became a newlywed, I never cooked greens. Not 'real' greens. I cheated and always bought the ones in the can. Then one Thanksgiving one of my friends brought over a plate of collard greens that her dad had made. I was instantly in love and from that moment on, canned greens that would not do.

Collard greens are my favorite. When cooked right, the pot liquour is amazing and you can 'sop' it up with a nice slice of cornbread.

How to Cook Collard Greens

You will need:
1 bunch for every  two people
Chicken Bouillon (1 per bunch)
1 Fresh Jalapeno (optional)
1 smoked turkey leg


In the kitchen sink, wash your leaves well. They are usually dirty so, make sure you rub them to get grit off.  After you have them clean, remove the large stem from the center and end. You only want the leafy part. Cut the leaf part into bite sized pieces.



Fill your pot with water, mix in your bouillon cube and slice in the optional pepper. My kids and I love a bit of spice, so we leave the seeds in. This is completely optional. Add in your smoked turkey leg and bring to a boil.

Once boiling, reduce heat to medium and cook for two hours until the greens are very tender.

For the breakfast sandwich I made my homemade biscuits which can be found here and my homemade fried chicken you can find here. I cooked an egg seasoned with salt and pepper and placed it on top.



Paired with the collards and the biscuits, the chicken and egg are amazing together. We even drizzled a little honey on ours.

Guacamole Deviled Eggs With Salsa and Crispy Strips

We are gearing up for college football season and one thing that I almost always see at tailgating events or parties are deviled eggs. When I made these, my family inhaled them. They lasted all of five minutes. With a little bbq dry rub mixed in and the tasty crispy tortilla strips added, these are a delicious.

You will need:
6 eggs (boiled, peeled)
Salsa (I used Kyvan's Honey Apple Salsa)
2 tbsp of Guacamole (or you can use this awesome recipe here)
1 tbsp BBQ Dry Rub (I used Kyvan's BBQ Rub)
Flour Tortilla
Oil for Frying

Cut your flour tortilla into strips. Then cut the strips into one inch strips. Fry in oil until golden brown. Remove from heat and place on paper towel. Sprinkle immediately with your bbq dry rub.

Slice boiled and peeled eggs in half and place the yolks into a mixing bowl. Add your guacamole, seasoning and mash and mix well. Add more guacamole if you want it to be more creamy.

Scoop the egg mixture into the hollowed egg halves.



Top with a dollop of salsa and add your crunchy tortilla strip.

And there you have a nice twist on deviled eggs. The strips are also a nice snack!

Pinterest Love: Easter Egg Ideas

It is no secret that pinterest is the place to be. I find myself checking it out everyday for inspiration. It is just so amazing how much creative juices flow in one place. I can remember when we would have to visit website after website after website and bookmark or favorite what we liked, saving to our computers...but thank goodness NO more! We can now find so much in one place.

With Easter right around the corner, and being that I still have school age kids who loves kidish things, I have been looking for egg ideas. I love love love these!

This is the one I am going to give a go. Isn't it the cutest! The decor on the outside of the egg is made

I am always careful about what I put on the outside of the eggs for Easter. With busy bodied kids peeling to eat them, glitter on the outside as pretty as they look just is not practical. Pinterest Love: Easter Tablescape Inspiration

So I have been scowering pinterest for Easter inspiration. With it right around the corner, I have been busy coming up with a few recipes to share. While looking, I started to venture away from recipe inspiration and towards table inspiration. My mother grew up with her mother always decorating the house for holidays. Not just a centerpiece, my grandmother went all out. She FULLY decorated every room to reflect the holiday. While my mom does not decorate the entire house, she loves setting her kitchen and dining room tables with a holiday inspired centerpiece. Pinterest seemed the most logical place to share some ideas with her.

I found some really cool looking stuff. While the cabinet in my kitchen sits stuffed full of Easter candy, plastic green grass and jellybeans, these tablescapes put what I could possibly muster together to shame. I think I may need to step up my game. lol


I absolutely love the simplistic and slightly country charm of this table by Jenny Steffens

Overnight Cranberry-Blueberry French Toast

My kids love telling my mom and me that we are the 'best cooks ever' but when I get the mmmmmmmmm good noises, I know it was good! My kids fell in love with this french toast and cranberry-blueberry sauce. Pure HEAVEN, I tell ya!!!  Stop by Living Locurto for this full recipe.
