Other than cooking for my family and posting here, I also am a photographer. I mostly do editorial or commercial fashion photography.  As a photographer, I love seeing my work published.

If you are interested in photography, I wrote an article complete with tips on editorial and commercial photography in the new issue of Mozi Magazine.



If you love children's fashions, great articles, I have an editorial feature in Little One Magazine that came out this weekend.  I also wrote a feature on School Lunches that has me stoked!

Tres Leches Layer Cake

A couple of weeks ago, I was at a birthday dinner with friends at a local restaurant. When we were getting ready to go, we asked the waiter to take the obligatory birthday photo of us all. When he found out it was a birthday celebration, he offered us a free dessert: Tres Leches cake.

Of course, I have seen this cake online and had heard of it. I do not know why it took my this long to make one. Man, oh, man...it is so good. Decadent, milky..it is like tiramisu with out the coffee flavor. Seriously that good.

Our oven is on the fritz but that did not stop me from heading to the local dollar store, buying up some disposable square pans and using the toaster oven. I. had. to. make. this. cake.

For Cake
1 1/2 cups cake flour
1 tsp salt
1 cup sugar
1/2 cup whole milk
1 tsp baking powder
1/3 cup oil
2 teaspoon vanilla extract
5 large eggs

For Sauce
1 can of evaporated milk
1 can of sweetened condensed milk
1/2 cup of heavy whipping cream

Whipped Cream
2 cups of heavy whipping cream
1/2 cup sugar

Cherries (fruit of choice)
Cinnamon

In bowl mix all dry ingredients for the cake. Once mixed, add in eggs, milk, oil and vanilla. Mix until smooth and creamy.

Pour into cake pan. (I used a 6 inch sqaure pan)

Bake at 350 for about 35 minutes until golden at top or toothpick comes out clean and it does not sink in when pressed lightly.

Remove from oven and poke with fork through the cake.



For the sauce, mix all milks together.

Use a spoon to spoon the sauce of the cake. I soaked mine 4 times. I covered it, let it soak in, the covered it three more times.



Allow to cool.

Bake another  for layered cake.

For whipped cream, in a mixing bowl, pour in heavy cream and sugar. Mix on high until whipped cream forms. Stiff peaks should be present. Do not overmix, you will get butter!

Now assemble your cooled cakes, coating with whipped cream. Top with cherries or strawberries...or even blackberries. I was so close to using blackberries today.



This recipe makes two 6 inch cake layers.

Another School Lunch Idea

I do not pack lunches for my kids everyday. In fact, usually only one of my kids request lunch and she only takes one three days a week. I try different stuff with the lunches and if anything makes its way back home, I know to never pack that lunch again.

I have never packed a sandwich in a lunch before other than something in a pita or a falafel but I saw this idea on pinterest. It is the case of 'if it looks good' they will eat it. For the first time in like ever, all of my kids asked to take this lunch to school.

Nothing extraordinary, just a sandwich....on a stick.



In this one, I made two. Turkey and cheddar and roast beef and cheddar. I included fresh honeydew melon, cottage cheese with strawberry sauce, raw broccoli, watermelon chunks and blackberries. Of course, could not forget the pickle.

It is just a sandwich. Stacked on a stick and topped with a cherry tomato. They loved it.

I used french bread that I cut into cubes. And layered with the meat and lettuce. I do recommend thinly sliced cheese...otherwise it will break when folding it.  I used Sargento's Ultra Thin Cheese Slices.

Funfetti Cake Mix Cookies

When I was growing up, my mom always baked something for each week.  We had dinner together as a family once my dad came home, talked about our day and enjoyed whatever sweet treat my mom had made for us.



Now that I am a mom, I remember just how special it made me feel that my mom thought of us and took time to make us things. Of course, I am far from a baker, so I like shortcuts. Where have I been? How did I not know you can make cookies out of cake mix?

I feel so behind but I am so glad I found this out (thank you, pinterest and Cooking Classy).

These are so good and I am going to enjoy trying different cake mixes for different tastes.

You will need:
1 Box of Cake Mix
2 eggs
1/2 cup of vegetable oil

Makes 20 regular sized cookies.

In bowl, mix your ingredients. Mix well until a dough forms. I use a rubber spatula to mix.



Form into one inch balls (I topped some of mine with more sprinkles) and place onto a nonstick cookie sheet.

Bake at 350 for 12-15 minutes. Remove and allow to cool.





I even filled a few with some frosting. So good. So easy. So quick!






Somerset Digital...

Back in the day I use to scrapbook.

I did digital.

I was horrible at paper scrapping but I loved digital. I guess that is why I got into photography.

I was one of two digital scrapbooking members of the popular site SIStv. I loved it.

I have not scrapped in years. I took a photo of my daughter and scrapped it. I submitted it and it made it.

I am happy.

My daughter is happy. She asked to take it to school.

That made me smile.

*and yes, this post was made with simple sentences because I kinda like simple sentences.

Halloween on Pinterest

Of course, Pinterest has become a go to place of inspiration. I find things I like all the time. I also like combing the internet for new things and pinning to my boards.

We have only just barely stepped into September but it is now time to think of Halloween. I am excited. If you take a peek at my Halloween inspiration board on pinterest, you can get an idea of the things I like.
